- 1/4 cup Red bell pepper diced
- 1 tbsp Red onion diced
- 1 cup Zucchini cut into small chunks (about 1/2 cup per portion)
- 1 clove Garlic sliced
Instructions
- Heat the oil in a non-stick pan over medium heat. Saute the peppers and onion until softened. Add the zucchini and garlic, saute until golden browned and tender.
- Season with salt and pepper before serving.
