Ingredients
- 1 tbsp Extra-virgin olive oil
- 2 tbsp Onion finely chopped
- 2 cloves Garlic sliced thin
- 2 cups Chicken broth
- 2 cups Kale chopped
- 1/2 cups Sweet potatoes diced small
- 1/2 tbsp Fresh marjoram chopped
- 4 Crackers
Instructions
- Heat a pot over medium heat. Once hot, add the oil. Saute the onion and garlic until softened.
- Pour in the broth, kale, sweet potato, marjoram, and season with salt and pepper, cover with a lid and bring to a simmer until the potato is tender and the flavor in the soup has developed, about 20 minutes. Season with salt and pepper to taste.
- Serve with crackers.
