Sweet Potato Kale Soup

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion finely chopped
  • 2 cloves Garlic sliced thin
  • 2 cups Chicken broth
  • 2 cups Kale chopped
  • 1/2 cups Sweet potatoes diced small
  • 1/2 tbsp Fresh marjoram chopped
  • 4 Crackers

Instructions

  • Heat a pot over medium heat. Once hot, add the oil. Saute the onion and garlic until softened.
  • Pour in the broth, kale, sweet potato, marjoram, and season with salt and pepper, cover with a lid and bring to a simmer until the potato is tender and the flavor in the soup has developed, about 20 minutes. Season with salt and pepper to taste.
  • Serve with crackers.
