Ingredients
- 1 cup Cucumber
- 1/4 tsp Salt
- 1 tbsp Fresh cilantro roughly chopped
- 1 tbsp Scallions sliced
DRESSING:
- 1/2 tbsp Rice wine vinegar
- 1 tsp Sesame oil
- 3/4 tsp Fresh ginger freshly grated
- 1 tsp Reduced-sodium soy sauce
- 1/4 tsp Sugar
Instructions
- Smash the cucumber until it splits open on the sides using something heavy like the smooth side of a meat mallet or rolling pin.
- Cut into 1 inch chunks then place in a bowl. Sprinkle with salt, toss, set aside for 20 minutes. Drain the excess liquid in the bowl.
- In a bowl whisk all the ingredients for the dressing until fully combined.
- Drizzle over cucumbers, toss with cilantro and scallions. Serve immediately.
