Ingredients
- 1 tbsp Extra-virgin olive oil
- 2 oz Deli ham
- 2 slices Sourdough bread toasted
- 4 Eggs beaten
- 1 Plums pitted and sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Heat a nonstick pan on medium heat. Once hot, add the oil. Saute the ham on both sides until golden brown. Then place on the toast.
- Add the eggs and to the pan, stir the eggs continuously using quick circular motions with a spatula or wooden spoon until creamy, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist and creamy. Season with salt and pepper to taste.
- Serve the eggs on the toast with plum. Garnish with fresh cracked black pepper flakes if desired.
