Smashed Cucumbers

Ingredients

  • 1 cup Cucumber
  • 1/4 tsp Salt
  • 1 tbsp Fresh cilantro roughly chopped
  • 1 tbsp Scallions sliced

DRESSING:

  • 1/2 tbsp Rice wine vinegar
  • 1 tsp Sesame oil
  • 3/4 tsp Fresh ginger freshly grated
  • 1 tsp Reduced-sodium soy sauce
  • 1/4 tsp Sugar

Instructions

  • Smash the cucumber until it splits open on the sides using something heavy like the smooth side of a meat mallet or rolling pin.
  • Cut into 1 inch chunks then place in a bowl. Sprinkle with salt, toss, set aside for 20 minutes. Drain the excess liquid in the bowl.
  • In a bowl whisk all the ingredients for the dressing until fully combined.
  • Drizzle over cucumbers, toss with cilantro and scallions. Serve immediately.
