Ingredients

  • 1 cups Baby carrots
  • 2 tsp Extra-virgin olive oil

Instructions

  • Preheat the oven to 375°F. Line a large rimmed baking sheet with foil for easy clean up, if desired.
  • Place the carrots on the baking sheet. Add the olive oil and season with salt and pepper.
  • Toss until the carrots are lightly coated in oil and seasonings. Arrange them in a single layer. Roast the carrots for about 20 minutes or until tender.
  • Taste and season with salt if needed before serving.
