Preheat the oven to 375°F. Line a large rimmed baking sheet with foil for easy clean up, if desired.
Place the carrots on the baking sheet. Add the olive oil and season with salt and pepper.
Toss until the carrots are lightly coated in oil and seasonings. Arrange them in a single layer. Roast the carrots for about 20 minutes or until tender.
Taste and season with salt if needed before serving.
