Ingredients
- 16 Chicken wings Drum sticks and flats (about 4 to 5 wings per portion)
- 2 tsp Extra-virgin olive oil
- 1 tbsp Chicken Seasoning rub Montreal chicken seaoning or your preferred seasoning rub
- 1 tbsp Brown sugar
- 4 tbsp Maple syrup
- 4 tbsp Buffalo wing sauce
- Fresh parsley garnish
- 2 tsp Crumbled blue cheese garnish (optional)
- 4 Dinner rolls warmed in a 300 degree oven or on the off side of the grill for 3 to 5 minutes before serving
- 4 tbsp Blue Cheese Dressing
Instructions
- Preheat the grill on medium heat. (Can also be made in the oven preheated to 400 degrees if not using a grill)
- Toss the chicken wings in a bowl with oil and seasoning rub; season generously with salt and pepper.
- Make sure the grill is hot. Place the wings on the grill and cook on both sides, about 8 -10 minutes per side. Check the internal temperature with a thermometer to reach 160 degrees. (Allow the wings to get a nice crispy char but not burn, adjust the heat level accordingly). Then set aside.
- Heat the sugar and maple syrup in a saucepan on medium low heat. Stir until the sugar is dissolved. Immediately toss the wings with the mixture.
- Portion the wings, drizzle with buffalo wing sauce, Garnish with parsley and crumbled blue cheese (if using). Serve with bread and dressing.
