Ingredients
- 4 medium Gold Beets peeled and sliced 1/4 inch thick
- 2 tsp Extra-virgin olive oil
- 1 tbsp Honey to taste
- 2 tbsp Fresh cilantro
- 1 tsp Jalapeño pepper chopped (optional)
- 2 tsp Feta cheese
Instructions
- Preheat the oven to 400 degrees. Lay the beets on a foil lined baking sheet. Drizzle with oil and season with salt and pepper. Bake in the oven until tender. (Easily pierce with a fork).
- Toss with honey, cilantro, and jalapeno (if using), season with salt and pepper to taste. Add more honey if needed.
- Garnish with feta.
