Ingredients
- 2 tbsp Extra-virgin olive oil
- 2 cups Potato peeled and shredded
- 1 tbsp Red onion diced
- 1/4 cup Green bell pepper diced
- 6 oz Breakfast sausage links chopped
- 8 Eggs
- 1/2 cup Cheddar cheese shredded
- 2 slices Sourdough bread toasted (or bread of your preference)
- 1 Orange peeled and sectioned, (Check the Fruit guide to substitute seasonal fruits)
- 2 tbsp Scallions chopped
Instructions
- Preheat the oven broiler on low.
- Heat oil in a non-stick pan over medium heat. Add in the potatoes and flatten them out in the pan. Mix in the onion, pepper, and sausage; season with salt and pepper. Cook until the potatoes are tender and the sausage is nicely browned and cooked through.
- With the back of a spoon, make evenly spaced pockets in the potato mixture. Crack an egg into each pocket. Top with cheese and cover with a lid.
- Cook until the whites of the eggs are firm. (Add a tablespoon or two of water to the pan to help firm up the whites of the eggs).
- Portion and serve with toast and orange. Garnish with scallions.
