Ingredients

  • 8 oz Rice noodles
  • 1 tbsp Extra-virgin olive oil
  • 2 cloves Garlic minced
  • 1 tbsp Fresh ginger peeled and grated
  • 1/4 Red onion minced
  • 1/4 cup Reduced-sodium soy sauce
  • 2 tbsp Lime juice

Instructions

  • In a salted pot of boiling water, cook the rice noodles according to the package directions, then drain.
  • Heat the oil in a non-stick pan over medium heat. Add garlic, ginger, and onion. Cook, stirring occasionally for about 2 to 3 minutes or until tender.
  • Remove from heat; toss in the noodles, soy sauce, and lime juice; season with salt and pepper to taste and serve.
