Ginger Noodles

- 8 oz Rice noodles
- 1 tbsp Extra-virgin olive oil
- 2 cloves Garlic minced
- 1 tbsp Fresh ginger peeled and grated
- 1/4 Red onion minced
- 1/4 cup Reduced-sodium soy sauce
- 2 tbsp Lime juice
In a salted pot of boiling water, cook the rice noodles according to the package directions, then drain.
Heat the oil in a non-stick pan over medium heat. Add garlic, ginger, and onion. Cook, stirring occasionally for about 2 to 3 minutes or until tender.
Remove from heat; toss in the noodles, soy sauce, and lime juice; season with salt and pepper to taste and serve.
