Ingredients
- 2 medium Sweet potatoes peeled and cut into chunks
- 1/4 Cup Brown sugar
- 2 Tbsp Butter diced
- 1/2 cup Egg white about 2 eggs
Instructions
- Preheat the oven to 375°F.
- Place sweet potatoes in a baking dish, and season with salt and pepper.
- Evenly disperse brown sugar and butter over the top.
- Cover with foil and bake for about 30 minutes or until the potatoes are tender.
- In the meantime, whisk the egg whites by hand or using an electric mixer firm peaks are achieved and resemble whip cream. Set aside.
- Once the potatoes are cooked, preheat the oven broiler on high.
- Spread the egg whites on top of the potatoes and broil until the egg whites are toasted golden brown. (keep a close eye on them so they do not burn).
- Portion and serve.
