Ingredients
- 8 Eggs
- 8 slices Sourdough bread lightly toasted
- 3 tbsp Mayonnaise
- 1 tbsp Capers
- 1/2 tsp Paprika
- 4 oz Deli ham chopped
- 1 tbsp Dijon mustard or more if needed
- 2 cup Baby spinach
- 8 slices Tomato
- 2 oz Potato chips
- 2 Pickles sliced into rounds
Instructions
- Place the eggs in a saucepan and cover with water. Bring to a boil for 10 minutes. Drain the water and fill the saucepan with cool water, let the eggs sit for 10 minutes.
- Lightly toast the bread.
- Peel the eggs. Add them to a bowl and mash them with a fork. Mix in the mayonnaise, capers, paprika, ham, and mustard. Then season with salt and pepper to taste and mix well.
- Layer the bread with spinach, egg salad, and tomato seasoned with salt and pepper.
- Cut in half and serve with chips and pickles.
