Deviled Ham Egg Salad Sandwich

Ingredients

  • 8 Eggs
  • 8 slices Sourdough bread lightly toasted
  • 3 tbsp Mayonnaise
  • 1 tbsp Capers
  • 1/2 tsp Paprika
  • 4 oz Deli ham chopped
  • 1 tbsp Dijon mustard or more if needed
  • 2 cup Baby spinach
  • 8 slices Tomato
  • 2 oz Potato chips
  • 2 Pickles sliced into rounds

Instructions

  • Place the eggs in a saucepan and cover with water. Bring to a boil for 10 minutes. Drain the water and fill the saucepan with cool water, let the eggs sit for 10 minutes.
  • Lightly toast the bread.
  • Peel the eggs. Add them to a bowl and mash them with a fork. Mix in the mayonnaise, capers, paprika, ham, and mustard. Then season with salt and pepper to taste and mix well.
  • Layer the bread with spinach, egg salad, and tomato seasoned with salt and pepper.
  • Cut in half and serve with chips and pickles.
