Ingredients
- 2 tbsp Extra-virgin olive oil
- 3 tbsp Red onion diced
- 4 cloves Garlic minced
- 1 lb Ground chicken
- 1/2 tbsp Chili powder use more if you like it spicy
- 2 tbsp Ground cumin
- 2 tsp All-purpose flour
- 3 cups Chicken broth
- 2 cups Zucchini sliced into half moons
- 1 cup Corn
- 1 cup White beans rinsed and drained
- 1/4 cup Fresh cilantro chopped, plus more for garnish
- 1 Avocado pitted and sliced
- 1/2 Jalapeño pepper sliced (optional)
Instructions
- Heat the oil in a pot over medium heat. Once hot, saute the onion and garlic until golden brown. Crumble in the ground chicken, chili powder, and cumin; breaking the chicken up into smaller pieces. Stir in the flour, and mix everything together.
- Add the broth, zucchini, corn, beans, salt and pepper. Simmer for about 25 minutes covered with a lid.
- Taste and adjust the seasoning with salt and pepper. Once it is very flavorful remove from the heat. Garnish with cilantro, avocado slices, and jalapeno (if using)
