Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 3 tbsp Red onion diced
  • 4 cloves Garlic minced
  • 1 lb Ground chicken
  • 1/2 tbsp Chili powder use more if you like it spicy
  • 2 tbsp Ground cumin
  • 2 tsp All-purpose flour
  • 3 cups Chicken broth
  • 2 cups Zucchini sliced into half moons
  • 1 cup Corn
  • 1 cup White beans rinsed and drained
  • 1/4 cup Fresh cilantro chopped, plus more for garnish
  • 1 Avocado pitted and sliced
  • 1/2 Jalapeño pepper sliced (optional)

Instructions

  • Heat the oil in a pot over medium heat. Once hot, saute the onion and garlic until golden brown. Crumble in the ground chicken, chili powder, and cumin; breaking the chicken up into smaller pieces. Stir in the flour, and mix everything together.
  • Add the broth, zucchini, corn, beans, salt and pepper. Simmer for about 25 minutes covered with a lid.
  • Taste and adjust the seasoning with salt and pepper. Once it is very flavorful remove from the heat. Garnish with cilantro, avocado slices, and jalapeno (if using)
