Ingredients

  • Nonstick spray
  • 2 Banana mashed
  • 1/2 cup Walnuts chopped
  • 3/4 cups All-purpose flour
  • 1/4 tsp Baking soda
  • 1/4 tsp Ground cinnamon
  • 1 pinch Salt
  • 1/4 cup Unsalted butter
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1/2 tsp Vanilla extract

Cinnamon Sugar Butter

  • 2 TBSP Butter softened at room temp, optional
  • 1 tsp Sugar optional
  • 1 tsp Cinnamon optional

Coffee

  • Coffee
  • Your choice of creamer
  • Your choice of sweetener

Instructions

  • Preheat oven to 350°F (177°C). Grease a small loaf pan with nonstick spray.
  • Prep the banana and walnuts per instructions above.
  • In a medium bowl whisk together the flour, baking soda, ground cinnamon, and salt.
  • In another medium bowl, use a stand or hand mixer on medium-high to beat the butter and sugar together until smooth and creamy. Turn the mixer to medium-low speed and beat in the egg until incorporated. Beat in the mashed bananas and vanilla extract.
  • Turn the mixer to low and add the dry ingredients to the wet ingredients, beating just until incorporated. Do not overmix the batter. Use a spoon to stir in the nuts just until combined. Transfer to the greased loaf pan and place in the oven.
  • Bake for about 30 to 45 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then remove.
  • Optional: In a bowl mash the butter, sugar, and cinnamon together with a fork until fully combined.
  • Brew and prepare the coffee to your liking.
  • To serve: Cut the bread into slices (save extra for future use) and spread with cinnamon sugar butter (if using). Enjoy with coffee.

Notes

  • Do not overmix the bread as this can make the loaf tough. The mixer should be on low when the flour mixture is incorporated and should only be mixed until combined.
  • Wrap the remaining bread tight and freeze or enjoy at your leisure.
