Ingredients
- Nonstick spray
- 2 Banana mashed
- 1/2 cup Walnuts chopped
- 3/4 cups All-purpose flour
- 1/4 tsp Baking soda
- 1/4 tsp Ground cinnamon
- 1 pinch Salt
- 1/4 cup Unsalted butter
- 1/4 cup Granulated sugar
- 1 Egg
- 1/2 tsp Vanilla extract
Cinnamon Sugar Butter
- 2 TBSP Butter softened at room temp, optional
- 1 tsp Sugar optional
- 1 tsp Cinnamon optional
Coffee
- Coffee
- Your choice of creamer
- Your choice of sweetener
Instructions
- Preheat oven to 350°F (177°C). Grease a small loaf pan with nonstick spray.
- Prep the banana and walnuts per instructions above.
- In a medium bowl whisk together the flour, baking soda, ground cinnamon, and salt.
- In another medium bowl, use a stand or hand mixer on medium-high to beat the butter and sugar together until smooth and creamy. Turn the mixer to medium-low speed and beat in the egg until incorporated. Beat in the mashed bananas and vanilla extract.
- Turn the mixer to low and add the dry ingredients to the wet ingredients, beating just until incorporated. Do not overmix the batter. Use a spoon to stir in the nuts just until combined. Transfer to the greased loaf pan and place in the oven.
- Bake for about 30 to 45 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then remove.
- Optional: In a bowl mash the butter, sugar, and cinnamon together with a fork until fully combined.
- Brew and prepare the coffee to your liking.
- To serve: Cut the bread into slices (save extra for future use) and spread with cinnamon sugar butter (if using). Enjoy with coffee.
Notes
- Do not overmix the bread as this can make the loaf tough. The mixer should be on low when the flour mixture is incorporated and should only be mixed until combined.
- Wrap the remaining bread tight and freeze or enjoy at your leisure.
