Ingredients

Omelet

  • 1 TBSP Extra-virgin olive oil
  • 4 oz Deli ham chopped
  • 1/4 cup Onion diced small
  • 1/4 cup Green bell pepper diced small
  • 4 Eggs beaten
  • 1/2 cup Cheddar cheese shredded
  • 2 slices Sourdough bread toasted
  • 2 TBSP Strawberry jam

Beverage

  • 16 oz Orange juice cold

Instructions

  • Prep the ingredients per the instructions above.
  • Preheat the oven broiler on low.
  • Make omelet: Heat an oven-safe non-stick pan over medium heat. Once hot, add the oil. Saute the onion and pepper until softened. Add the ham and saute until golden brown. Pour in the eggs and reduce the heat to low. Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it.
  • Once the eggs are nearly set, sprinkle cheese evenly over the top and place the pan under the oven broiler until the cheese is melted and the eggs are no longer runny. Fold the omelet in half.
  • Make toast: Toast the bread in a toaster oven. Spread with jam.
  • Serve: Enjoy the omelet with toast and orange juice.
