Preheat oven to 350°F (177°C). Grease a small loaf pan with nonstick spray.
Prep the banana and walnuts per instructions above.
In a medium bowl whisk together the flour, baking soda, ground cinnamon, and salt.
In another medium bowl, use a stand or hand mixer on medium-high to beat the butter and sugar together until smooth and creamy. Turn the mixer to medium-low speed and beat in the egg until incorporated. Beat in the mashed bananas and vanilla extract.
Turn the mixer to low and add the dry ingredients to the wet ingredients, beating just until incorporated. Do not overmix the batter. Use a spoon to stir in the nuts just until combined. Transfer to the greased loaf pan and place in the oven.
Bake for about 30 to 45 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then remove.
Optional: In a bowl mash the butter, sugar, and cinnamon together with a fork until fully combined.
Brew and prepare the coffee to your liking.
To serve: Cut the bread into slices (save extra for future use) and spread with cinnamon sugar butter (if using). Enjoy with coffee.
