Ingredients
- 4 oz Breakfast sausage links
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Red onion minced
- 2 cloves Garlic minced
- 1 cup Chicken broth
- 1 tbsp Tomato paste
- 1/4 tsp Paprika
- 4 Eggs
- 2 slices Sourdough bread toasted, or bread of your choice
- 1 Dragon fruit peeled and diced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Preheat the oven to 375 degrees.
- Cook the sausage in the oven to an internal temperature of 155 degrees using a thermometer till nicely browned all over.
- Heat an oven safe non-stick pan or skillet on medium heat. Once hot, add the oil. Saute the onions and garlic until golden brown.
- Stir in the broth, tomato paste, and paprika until fully combined. Remove from the heat. Season with salt and pepper. Crack the eggs into the pan.
- Place the pan in the oven and cook for 8 to 12 minutes. (Ideally, you want the whites of the egg firm and the yolks still soft. Cook longer if a firmer yolk is desired.)
- Toast the bread.
- Serve the eggs with sausage, toast, and dragon fruit.
