Ingredients

  • 4 oz Breakfast sausage links
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Red onion minced
  • 2 cloves Garlic minced
  • 1 cup Chicken broth
  • 1 tbsp Tomato paste
  • 1/4 tsp Paprika
  • 4 Eggs
  • 2 slices Sourdough bread toasted, or bread of your choice
  • 1 Dragon fruit peeled and diced (Check the Fruit guide to substitute seasonal fruits

Instructions

  • Preheat the oven to 375 degrees.
  • Cook the sausage in the oven to an internal temperature of 155 degrees using a thermometer till nicely browned all over.
  • Heat an oven safe non-stick pan or skillet on medium heat. Once hot, add the oil. Saute the onions and garlic until golden brown.
  • Stir in the broth, tomato paste, and paprika until fully combined. Remove from the heat. Season with salt and pepper. Crack the eggs into the pan.
  • Place the pan in the oven and cook for 8 to 12 minutes. (Ideally, you want the whites of the egg firm and the yolks still soft. Cook longer if a firmer yolk is desired.)
  • Toast the bread.
  • Serve the eggs with sausage, toast, and dragon fruit.
