Cook the sausage in the oven to an internal temperature of 155 degrees using a thermometer till nicely browned all over.
Heat an oven safe non-stick pan or skillet on medium heat. Once hot, add the oil. Saute the onions and garlic until golden brown.
Stir in the broth, tomato paste, and paprika until fully combined. Remove from the heat. Season with salt and pepper. Crack the eggs into the pan.
Place the pan in the oven and cook for 8 to 12 minutes. (Ideally, you want the whites of the egg firm and the yolks still soft. Cook longer if a firmer yolk is desired.)
Toast the bread.
Serve the eggs with sausage, toast, and dragon fruit.
