Ingredients

Avocado Toast

  • 2 Avocados
  • ½ tsp Lemon juice
  • ½ tsp Garlic powder
  • 1 TBSP Fresh cilantro chopped
  • 2 slices Your choice of bread toasted

Seasoning

  • Salt to taste
  • Black pepper to taste

Sunny Side Up Eggs

  • 2 TBSP Butter
  • 4 Eggs

Orange Juice

  • 16 oz Orange juice

Instructions

  • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocado flesh with a fork until smooth. Season with salt and black pepper to taste and stir the lemon juice, garlic powder, and cilantro.
  • Toast the bread. Then spread the avocado evenly onto the toasted bread slices.
  • Heat a non-stick skillet over medium heat and add butter.
  • Crack the eggs into the skillet.
  • Cook the eggs until the whites are set but the yolks are still runny, about 2-3 minutes. Season the eggs with salt and black pepper.
  • Serve the eggs over the avocado toast with orange juice.
