Ingredients

Marinated Steak

  • 1 tsp Extra-virgin olive oil
  • 3 TBSP Lime juice
  • 3 TBSP Reduced-sodium soy sauce
  • 4 cloves Garlic minced
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 8 oz Sirloin steak sliced thin

Seasoning

  • Salt
  • Black pepper

Fajita

  • 2 tsp Extra-virgin olive oil
  • 1 Green bell pepper sliced
  • 1 cup Onion sliced
  • 4 Soft taco shells
  • 4 TBSP Sour cream optional

Chips and Guac

  • 2 Avocado ripe
  • 2 tsp Fresh cilantro chopped
  • 1 TBSP Lime juice
  • ¼ tsp Garlic powder
  • ¼ Ground cumin
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Margarita

  • 16 oz Water cold
  • 2 oz Orange juice cold
  • 1/2 cup Lime juice
  • 1 TBSP Honey or sugar to taste

Instructions

  • Make the Marinated Steak: Mix all ingredients together in a large bowl. Toss to coat the steak in the marinade. Cover bowl and place in refrigerator. Let steak marinate for 30 minutes or longer if preferred.
  • Heat the oil in a skillet on medium heat. Saute the peppers and onions until softened. Add the steak. Cook until the steak is nicely browned then set aside.
  • Warm the taco shells on both sides in the skillet over medium heat.
  • Make the Guacamole: In a bowl mash the avocado and mix with chopped cilantro, lime juice, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are combined and the guacamole reaches your desired consistency.
  • Mix the ingredients for the margarita until very well combined. Add honey or sugar to taste. Serve over ice if desired.
  • Serve the steak with taco shells. Enjoy with sour cream, chips and guac, and margarita
