Ingredients

- 2 cups Potatoes diced
- 2 TBSP Extra-virgin olive oil
- ¼ tsp Garlic powder
- ¼ tsp Paprika
- Salt to taste
- Black pepper to taste
Sausage
- 4 Breakfast sausage links
Eggs
- 4 Eggs
- 1 TBSP Butter or oil (for cooking)
Toast with Jam
- 2 slices Your choice of bread
- 2 TBSP Your choice of jam or preserves
Fruit
- 2 cups Fresh fruit prepared accordingly (such as melon, grapes, berries)
Orange Juice
- 16 oz Orange juice
Instructions
- Preheat the oven to 400F (204C).
- Prepare ingredients per the instructions above.
- Toss the potatoes with oil, garlic powder, paprika, salt and pepper. Cook on a baking sheet in the oven tossing about halfway through until tender and nicely browned.
- Cook the sausage on a baking sheet to an internal temp of 155F (68C).
- Add butter or cooking oil to a nonstick pan over medium heat. Add the eggs to the pan. Cook as preferred (sunny side up, over easy, scrambled). Season with salt and pepper.
- Toast the bread. Then spread with jam.
- Serve the eggs with sausage, home fries, toast, fruit, and orange juice.
