Eggs And Home Fries

Ingredients

Home Fries

  • 2 cups Potatoes diced
  • 2 TBSP Extra-virgin olive oil
  • ¼ tsp Garlic powder
  • ¼ tsp Paprika
  • Salt to taste
  • Black pepper to taste

Sausage

  • 4 Breakfast sausage links

Eggs

  • 4 Eggs
  • 1 TBSP Butter or oil (for cooking)

Toast with Jam

  • 2 slices Your choice of bread
  • 2 TBSP Your choice of jam or preserves

Fruit

  • 2 cups Fresh fruit prepared accordingly (such as melon, grapes, berries)

Orange Juice

  • 16 oz Orange juice

Instructions

  • Preheat the oven to 400F (204C).
  • Prepare ingredients per the instructions above.
  • Toss the potatoes with oil, garlic powder, paprika, salt and pepper. Cook on a baking sheet in the oven tossing about halfway through until tender and nicely browned.
  • Cook the sausage on a baking sheet to an internal temp of 155F (68C).
  • Add butter or cooking oil to a nonstick pan over medium heat. Add the eggs to the pan. Cook as preferred (sunny side up, over easy, scrambled). Season with salt and pepper.
  • Toast the bread. Then spread with jam.
  • Serve the eggs with sausage, home fries, toast, fruit, and orange juice.
