Ingredients
- 4 slices Bacon
- 2 slices Sourdough bread toasted
- 2 tsp Extra-virgin olive oil
- 4 Eggs
- 2 tsp Butter
- 2 TBSP Triple berry jam
Beverage
- Coffee
- Cream creamer of choice
- Sugar sweetener or choice
Instructions
- Make the coffee according to the directions on the coffee maker.
- Cook the bacon: Lay the bacon in a nonstick pan over medium heat (see notes). Cook on both sides until golden brown and crispy. While the bacon is cooking, toast the bread.
- Toast the bread in a toaster oven.
- Heat a non-stick pan on medium heat.
- When the bacon is cooked, set aside on paper towels to drain any excess grease.
- Fry the eggs: Add the remaining oil to the heated pan. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm. Add a tablespoon or two of water and cover with a lid to finish firming up the whites of the eggs while keeping the yolks soft, about 1 to 2 minutes. Season with salt and pepper.
- Spread the toast with butter then jam.
- Serve: Enjoy the eggs with bacon, toast, and coffee (with cream and sugar if desired).
Notes
Pro Tip: Adding the bacon to a cold pan instead of hot allows the fat to slowly render (melt), resulting in crispier bacon.
