Pickled Cucumber and Ginger

Ingredients

  • 1/2 cup Rice wine vinegar
  • 1/4 cup Water
  • 2 tbsp Sugar
  • 1 cup Cucumber sliced into thin rounds
  • 4 tbsp Pickled ginger
  • 2 tbsp Scallions chopped

Instructions

  • In a small pot, bring vinegar, water, and sugar to a boil, stir to dissolve the sugar and remove from heat.
  • Place the cucumber in a bowl and pour in the vinegar mixture.
  • Set aside to cool, stirring occasionally until the liquid has completely cooled. Drain well and toss with pickled ginger and scallions.
