Instructions
In a small pot, bring vinegar, water, and sugar to a boil, stir to dissolve the sugar and remove from heat.
Place the cucumber in a bowl and pour in the vinegar mixture.
Set aside to cool, stirring occasionally until the liquid has completely cooled. Drain well and toss with pickled ginger and scallions.
