Ingredients
- 1/2 cup White rice
- 3/4 lb Ground beef
- 1 tbsp Ground cumin
- 1/2 tbsp Garlic powder
- 1 tbsp Paprika
- 1 tbsp Chili powder
- 4 oz Colby cheese shredded
- 1 cup Corn
- 1/4 cup Black beans drained and rinsed
- 4 cups Romaine lettuce chopped
- 1/2 cup Tomato diced
- 2 oz Tortilla chips
- 4 tsp Sour cream
Instructions
- Cook the rice according to the instructions on the package. Once cooked, drain any excess water if necessary and season with salt and pepper to taste. Cover with a lid to keep warm and set aside.
- In a non-stick pan over medium heat, Add the ground beef, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Season with salt and pepper to taste. Once it is mostly browned, add 1/4 cup of water and simmer for 6 minutes.
- Spread the cheese over the beef, cover with a lid to melt.
- Mix the corn and black beans, season with salt and pepper.
- Serve the beef with rice, lettuce, tomato, chips, and sour cream.
