Ingredients

  • 2 tbsp Butter softened
  • 2 tbsp Parmesan cheese grated
  • 8 Eggs
  • ½ cup Heavy cream
  • 2 tbsp Goat cheese crumbled.
  • 6 oz Chicken sausage links sliced
  • 2 slices Sourdough bread toasted
  • 4 tsp Feta cheese crumbled
  • 1/2 tsp Red pepper flakes optional
  • 1 tbsp Fresh cilantro garnish
  • 1 cup Strawberries sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Preheat oven to 350˚F.
  • Rub an oven safe non-stick pan or small baking dish with butter and sprinkle with the parmesan.
  • Crack the eggs into the pan or baking dish and pour the cream over top and evenly distribute the goat cheese. Season with salt and pepper.
  • Bake for 12-15 minutes or until whites have just set, but yolks are still a little runny.
  • In the meantime, in a non-stick pan over medium heat, brown the chicken sausage on both sides. Toast the bread.
  • Remove eggs from oven and top with crumbled feta, crushed red pepper flakes and cilantro. Serve with bread, chicken sausage, and strawberries.
