Ingredients

  • 1/4 cup Canola oil or more if needed
  • 1/2 cup All-purpose flour
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 medium Zucchini sliced into thin rounds 1/4 inch thick

Sauce

  • 4 tbsp Mayonnaise
  • 1 tbsp Ketchup
  • 1 tsp Paprika
  • 1/2 tsp Chili powder
  • 1 tsp Garlic powder

Instructions

  • Preheat the oil in a skillet or saute pan on medium heat.
  • Mix the flour, garlic powder, paprika, salt and pepper in a bowl. Toss the zucchini in the flour to coat both sides.
  • Once the oil is hot, add the zucchini in a single layer to the pan (in batches if needed). Cook until crispy and deep golden brown on both sides. Remove with a slotted spoon onto paper towels to drain excess grease. Season with salt immediately.
  • In a bowl whisk together all of the ingredients for the sauce. Season with salt and pepper to taste. Adjust any spices as needed.
  • Serve zucchini chips with sauce.
