Preheat the oil in a skillet or saute pan on medium heat.
Mix the flour, garlic powder, paprika, salt and pepper in a bowl. Toss the zucchini in the flour to coat both sides.
Once the oil is hot, add the zucchini in a single layer to the pan (in batches if needed). Cook until crispy and deep golden brown on both sides. Remove with a slotted spoon onto paper towels to drain excess grease. Season with salt immediately.
In a bowl whisk together all of the ingredients for the sauce. Season with salt and pepper to taste. Adjust any spices as needed.
