Yucca Fries

Ingredients

  • 1 medium Yucca root also known as Cassava
  • 2 tbsp Extra-virgin olive oil
  • 1/2 tsp Garlic powder
  • 2 tbsp Ketchup

Instructions

  • Preheat the oven to 425 degrees.
  • Bring a pot of salted water to a boil.
  • Trim off the ends of the yucca and peel off the skin. Cut the yucca into french fry like strips about 3 inches long and 1/4 to 1/2 inch in diameter.
  • Boil the yucca until tender and the ends start to look frayed, about 10 to 15 minutes. Then drain well. Place on a lined baking sheet, toss with oil, garlic powder, salt and pepper.
  • Bake until crisp on the outside and tender inside. Tossing every so often throughout cooking to get an even golden brown.
  • Season with salt to taste before serving. Serve with ketchup.
    Serving size is about 1 cup per portion.
