Trim off the ends of the yucca and peel off the skin. Cut the yucca into french fry like strips about 3 inches long and 1/4 to 1/2 inch in diameter.
Boil the yucca until tender and the ends start to look frayed, about 10 to 15 minutes. Then drain well. Place on a lined baking sheet, toss with oil, garlic powder, salt and pepper.
Bake until crisp on the outside and tender inside. Tossing every so often throughout cooking to get an even golden brown.
Season with salt to taste before serving. Serve with ketchup. Serving size is about 1 cup per portion.
