Ingredients
Cucumber Water:
- 1 Cucumber sliced
- 4 cups Water
- Ice cubes optional
Vegetable Hummus Wrap:
- 1 cup Arugula
- 2 TBSP Extra-virgin olive oil
- 1 TBSP Lemon juice
- Salt and pepper to taste
- 2 Tortilla wraps (whole wheat or your preferred type)
- 1 cup Hummus
- 1 cup Carrots peeled and shredded
- 1 Cucumbers thinly sliced
- 1 Tomato sliced
- 1 Avocado sliced
- 4 Parmesan cheese sliced from a wedge or block
- 4 oz Potato chips
- 2 Pickle spears
Instructions
- Combine cucumber and water. Let sit in the refrigerator to infuse for at least 10 minutes.
- In a small bowl, toss the arugula with olive oil, lemon juice, salt, and pepper to make a simple dressing.
- Lay the tortilla wraps flat on a clean surface.
- Spread a generous amount of hummus on each tortilla wrap, covering the surface.
- Layer shredded carrots, cucumber slices, tomato slices, and avocado slices on top of the hummus.
- Drizzle the dressed arugula over the vegetables on each wrap.
- Lay two parmesan cheese wedge slices on each wrap.
- Carefully roll up the wraps, folding in the sides as you go, to create a tight and secure wrap. Slice each wrap in half diagonally if desired.
- Serve the Vegetable Hummus Wraps with a side of chips and pickle, and cucumber water.
