Tuscan Chicken Pasta

Ingredients

  • 1/2 lb Linguine pasta or pasta of your choice
  • 1 tbsp Extra-virgin olive oil
  • 1 lb Chicken breast boneless skinless diced into 1-inch pieces
  • 2 cloves Garlic minced
  • 12 oz Canned diced tomato
  • 3/4 cup Heavy cream
  • 3 tbsp Parmesan cheese grated
  • 3 cups Baby spinach
  • 2 tbsp Fresh basil chopped for garnish
  • 1/4 loaf Crusty bread sliced

Instructions

  • In a pot of salted boiling water, cook linguine according to package instructions. Drain and set aside.
  • Heat the oil in a large nonstick pan over medium heat. Add chicken and saute for about 2 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in tomatoes, cream, and parmesan. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
  • Add the cooked pasta and spinach and toss until pasta is fully coated in sauce and spinach is wilted. Season with salt and pepper to taste. Garnish with basil and serve with bread.
