12ozCanned diced tomato
3/4cupHeavy cream
3tbspParmesan cheesegrated
3cupsBaby spinach
2tbspFresh basilchopped for garnish
1/4 loafCrusty breadsliced
Instructions
In a pot of salted boiling water, cook linguine according to package instructions. Drain and set aside.
Heat the oil in a large nonstick pan over medium heat. Add chicken and saute for about 2 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in tomatoes, cream, and parmesan. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
Add the cooked pasta and spinach and toss until pasta is fully coated in sauce and spinach is wilted. Season with salt and pepper to taste. Garnish with basil and serve with bread.
