Ingredients
- 1 tbsp Extra-virgin olive oil
- 6 oz Italian turkey sausage links chopped
- 4 cups Baby spinach
- 8 Eggs beaten
- 2 oz Cheddar cheese shredded
- 4 Tortilla wraps
- 2 Apples sliced (Check the Fall Fruit guide to substitute seasonal fruits)
Instructions
- Heat the oil in a non-stick pan over medium heat.
- Add the sausage and brown until it is no longer pink. Stir in the spinach until wilted.
- Add the eggs to the pan. Move the eggs around the pan using a spatula until they are firm but still moist and no longer runny. Mix in the cheese and adjust the seasoning with salt and pepper to taste.
- Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with apples.
