Ingredients
- 4 cups Kale chopped
- 2 tbsp Walnuts
- ½ cup Dried cherries
- 2 tsp Goat cheese crumbled
Dressing
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp Honey
Instructions
- Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces and transfer to a big salad bowl. Sprinkle a small pinch of salt over the kale and massage the leaves with your hands by lightly scrunching big handfuls at a time, until the leaves are darker in color and fragrant.
- Top the kale with walnuts, cherries, and goat cheese.
- In a small bowl, whisk the dressing ingredients together and spoon the dressing over the salad.
