  • Heat the oil in a non-stick pan over medium heat.
  • Add the sausage and brown until it is no longer pink. Stir in the spinach until wilted.
  • Add the eggs to the pan. Move the eggs around the pan using a spatula until they are firm but still moist and no longer runny. Mix in the cheese and adjust the seasoning with salt and pepper to taste.
  • Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with apples.
