Add the sausage and brown until it is no longer pink. Stir in the spinach until wilted.
Add the eggs to the pan. Move the eggs around the pan using a spatula until they are firm but still moist and no longer runny. Mix in the cheese and adjust the seasoning with salt and pepper to taste.
Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with apples.
