Ingredients

  • 1 cup Greek yogurt
  • 2 tbsp Lemon juice
  • 1 Red bell pepper thinly sliced
  • 2 tbsp Fresh dill chopped
  • 1/4 Cucumber chopped
  • 1 lb Ground turkey
  • 3 Scallions chopped
  • 1 tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • 4 Pita bread
  • 2 tsp Lemon zest

Instructions

  • Heat the oven to 400°F and line a baking sheet with foil.
  • In a blender, add the yogurt, lemon juice, peppers, dill, cucumber, salt and pepper. Blend until smooth. Refrigerate until ready to use.
  • In a bowl, combine the turkey, chopped scallions, cumin, salt and pepper. Shape the mixture into small meatballs and place on the prepared sheet. Bake for about 6 to 8 minutes or until an internal temperature of 155°F is achieved.
  • Drizzle the oil on the pita, season with lemon zest, salt and pepper. Bake in the oven until warm, about 3 minutes, then quarter.
  • Drizzle the sauce over the meatballs and serve with pita.
