Ingredients
Broccoli Cheddar Soup:
- 2 tsps Butter
- 1/4 cup Onion diced
- 2 cloves Garlic minced
- 2 cups Broccoli florets
- 2 cups Chicken broth
- 1 cup Milk
- 1 cup Cheddar cheese shredded
- 1/4 cup Croutons garnish optional
Seasoning
- Salt
- Black pepper
Special Sauce
- 2 TBSP Mayonnaise
- 1 TBSP Ketchup
- 1/2 tsp Lemon juice
- 1/2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- dash Hot sauce
Bacon Turkey Bravo:
- 4 slices Bacon
- 4 slices Focaccia bread
- 8 oz Deli turkey breast
- 4 slices Smoked gouda cheese
- 4 slices Tomato
- 4 leaves Romaine lettuce
Sparkling Lemon Water:
- 24 oz Sparkling water
- 1 Lemon sliced
Instructions
- Prep all ingredients per the instructions above.
- Prepare the Broccoli Cheddar Soup: In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent. Add the broccoli florets and cook for a few minutes until slightly tender. Pour in the vegetable or chicken broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes or until the broccoli is fully cooked. Using an immersion blender or regular blender, puree the soup until smooth. Return the pot to the stove and add the milk. Stir well.
- Gradually add the shredded cheddar cheese, stirring until it melts and the soup is creamy. Season with salt and pepper to taste. Keep warm on low heat.
- Mix all the ingredients for the sauce in a bowl until fully combined.
- Prepare the Bacon Turkey Bravo: Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease. Toast the bread to your liking. Spread sauce on one side of each bread slice. Layer the lettuce, tomato, turkey, bacon, and cheese. Top with bread. Cut in half.
- Mix the sparkling water with lemon.
- Serve the soup in bowls and garnish with croutons if desired. Enjoy with turkey bacon bravo, and sparkling water.
