Prep all ingredients as listed above.
Lay the bacon in a pan over medium low heat. Cook on both sides until golden brown and crispy. Set aside on paper towels.
Prepare the signature sauce: In a small bowl, whisk together mayonnaise, ketchup, lemon juice, Worcestershire sauce, dijon mustard, and hot sauce to taste. Refrigerate until ready to use.
Toast the bread (optional): Toast or warm the bread slices if desired.
Spread the sauce: Spread sauce on each slice of bread.
Assemble the sandwiches: Layer the bread, with lettuce, tomato, turkey, gouda, and bacon. Place the remaining bread slice on top, sauce side down. Slice each sandwich in half.
Serve the sandwich with potato chips, pickle spears, and apple cider.
