Ingredients
- 1 Pita bread
- 2 tbsp Butter
- 6 Grape tomatoes quartered
- 4 Eggs beaten
- 2 tbsp Feta cheese crumbled fine
- 1 tbsp Scallions chopped
- 1 Orange peeled and sectioned (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Heat a nonstick pan on medium heat. Warm the pita on both sides then cut into wedges.
- Heat a non-stick pan over medium heat. Once hot, melt the butter then add in the tomatoes, egg, and half of the cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Portion and top with scallions and remaing feta; serve with pita and orange.
