Ingredients

Tacos

  • 1/2 TBSP Extra-virgin olive oil
  • 8 oz Ground beef
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 6 Taco Shells
  • 1/2 cup Romaine lettuce shredded
  • 1/3 cup Grape tomatoes chopped
  • 1/2 cup Mexican cheese blend
  • Fresh cilantro garnish
  • 1/4 cup Sour cream

Guacamole and Chips

  • 1 tsp Fresh cilantro chopped
  • 1 Avocado pitted and skin removed
  • 1 clove Garlic minced
  • 1/4 cup Tomato diced small
  • 1/4 tsp Ground cumin
  • 2 oz Tortilla chips

Light Beer

  • 24 oz Light beer cold

Instructions

  • Prep all ingredients per the instructions above.
  • Heat a saute pan on medium heat. Add the oil and brown the beef along with the cumin, paprika, and chili powder. Break it up into small pieces until it is no longer pink. Then set aside.
  • Make the guacamole: Mash the avocado with a fork. Add the remaining ingredients (except the chips) and stir them together. Season with salt and pepper to taste. Cover and transfer to the fridge until you are ready to serve.
  • Warm the taco shells per instructions on the package.
  • Assemble the tacos: Fill the taco shells with beef, lettuce, tomatoes, and cheese blend. Garnish with cilantro.
  • Serve: Enjoy the tacos with sour cream, chips and guacamole, and beer.
