Sweet Potato Casserole

- 2 medium Sweet potatoes peeled and cut into chunks
- 1/4 Cup Brown sugar
- 2 Tbsp Butter diced
- 1/2 cup Egg white about 2 eggs
Preheat the oven to 375°F.
Place sweet potatoes in a baking dish, and season with salt and pepper.
Evenly disperse brown sugar and butter over the top.
Cover with foil and bake for about 30 minutes or until the potatoes are tender.
In the meantime, whisk the egg whites by hand or using an electric mixer firm peaks are achieved and resemble whip cream. Set aside.
Once the potatoes are cooked, preheat the oven broiler on high.
Spread the egg whites on top of the potatoes and broil until the egg whites are toasted golden brown. (keep a close eye on them so they do not burn).
Portion and serve.
