Ingredients

  • 8 oz Sirloin steaks sub NY strip steak or filet mignon
  • 1 tsp Steak seasoning
  • 2 TBSP Extra-virgin olive oil
  • 4 Eggs
  • 2 slices Sourdough bread toasted
  • 2 TBSP Apricot jam

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Season both sides of the steak well with salt and steak seasoning.
  • Cook steak: Heat a nonstick pan over medium heat. Once hot add half of the oil. Cook the steaks on both sides to your desired temperature using a thermometer (see below). Let rest for 5 minutes. Trim the fat off the sides if desired, before slicing thin against the grain. While resting, fry eggs.
  • Heat a nonstick pan over medium heat. Add remaining oil. Crack the eggs into the pan; cook until egg whites start to become firm, add 1 to 2 tablespoons of water and cover with a lid to help firm the whites up.
  • Toast bread in toaster oven.
  • Serve the eggs with steak, toast with jam, and orange juice.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
