Ingredients

French Fries

  • 2 medium Potatoes about 1/2 lb of potato per portion
  • 4 TBSP Ketchup

Po' Boy

  • 8 oz Shrimp peeled and deveined tail off
  • 2 Eggs beaten
  • 1 cup All-purpose flour
  • 1.5 tsp Cajun seasoning or more to taste
  • 1/4 cup Canola oil
  • 1/2 French baguette about 6-inch piece per portion
  • 1/2 cup Romaine lettuce shredded
  • 4 slices Tomato
  • 1/2 Jalapeño pepper thinly sliced (optional for some spiciness)

Remoulade

  • 1/4 cup Mayonnaise
  • 1 TBSP Sriracha sauce or use chili sauce
  • 1 tsp Creole mustard
  • 1/2 tsp Horseradish or hot per preference
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp Shallot minced
  • 1 clove Garlic minced
  • 1/2 Lemon juiced

Lemonade

  • 24 oz Lemonade cold

Instructions

  • Prep the ingredients per the instructions above.
  • Preheat the air fryer to 400°F (200°C) for the fries.
  • Prep the potatoes: Cut the potatoes into 1/4-inch thick sticks. Place into a large bowl and cover completely with cold water. Drain well and pat dry with a towel.
  • Prepare the air fryer fries: Pat the potato strips dry with a towel or paper towel. In a bowl, toss the potato strips with olive oil, salt, pepper, and any desired seasonings. Place the seasoned potatoes in the preheated air fryer and cook for about 15-20 minutes, shaking or flipping them halfway through, until they are golden brown and crispy, and season with salt immediately to taste.
  • Place the shrimp in the egg. Mix the flour with cajun seasoning and season with salt.
  • Coat the shrimp with the flour mixture well. Set aside.
  • Whisk all of the remoulade ingredients together in a bowl.
  • Heat oil in a saute pan. Fry the shrimp on both sides until golden brown and firm.
  • Lightly toast the baguette on the grill.
  • Layer the inside of the baguette with shredded lettuce, sliced tomatoes, sliced peppers (optional), and shrimp. Drizzle with remoulade sauce.
  • Serve the po’ boy with french fries, ketchup, and lemonade.
