Prep the ingredients per the instructions above.
Preheat the air fryer to 400°F (200°C) for the fries.
Prep the potatoes: Cut the potatoes into 1/4-inch thick sticks. Place into a large bowl and cover completely with cold water. Drain well and pat dry with a towel.
Prepare the air fryer fries: Pat the potato strips dry with a towel or paper towel. In a bowl, toss the potato strips with olive oil, salt, pepper, and any desired seasonings. Place the seasoned potatoes in the preheated air fryer and cook for about 15-20 minutes, shaking or flipping them halfway through, until they are golden brown and crispy, and season with salt immediately to taste.
Place the shrimp in the egg. Mix the flour with cajun seasoning and season with salt.
Coat the shrimp with the flour mixture well. Set aside.
Whisk all of the remoulade ingredients together in a bowl.
Heat oil in a saute pan. Fry the shrimp on both sides until golden brown and firm.
Lightly toast the baguette on the grill.
Layer the inside of the baguette with shredded lettuce, sliced tomatoes, sliced peppers (optional), and shrimp. Drizzle with remoulade sauce.
Serve the po’ boy with french fries, ketchup, and lemonade.
